I have never quite seen marshmallows like this before, a mallow that looks as good as, and is infused with as many flavours as any tempting dessert. The exquisite range of gourmet flavours just sound divine and makes me want to try all of them! Just reading the names and flavours is like entering an enchanted land of marshmallows …lemon and blueberry, rosewater and pistachio, elderflower and blackcurrant, lime and coconut.
Couples are always seeking unique wedding ideas and using marshmallows is a charming way to do this. I always loved marshmallows as a child and these sumptuous creations from *The London Marshmallow Company* certainly bring back those nostalgic memories but on a much more glamorous level! *How did The London Marshmallow Company begin?*
It was a very organic start really…Ross and I are both really into our food and I had always wanted to make homemade marshmallows after reading a recipe in one of my mums cookery books as a child. We were bored one weekend so gave it a go – they tasted amazing so we gave them as Christmas gifts… One thing led to another and we decided to start selling them at Old Spitalfields Market at the weekend.
*Where do you get your inspiration from?*
All of our mallows are named after a place in London – again we’ve added new flavours gradually over the past two years. One of our first flavours The Spitalfields (Sicilian Lemon and Poppy seed) we launched on our first day at Old Spitalfield’s Market – it’s Lemon flavour is inspired by the fruit market that used to be held there and the poppy seeds come from the opium dens found in that part of Victorian London! Or our best seller The Stokey, which comes from our first wedding couple who were from Stoke Newington and they requested peanut butter marshmallows!

Fresh, Natural and Delicious
*What makes your marshmallows unique?*
Unlike traditional shop-bought pink and white marshmallows and most other ‘gourmet’ marshmallow brands we use egg white in our French–inspired marshmallow recipes,this gives them a super-soft and light soufflé texture. We also layer our flavours giving our distinctive two-tone look and many of our mallows are sandwiched with homemade nut pralines, real fruit and dipped in chocolate. We also always use real fruit, nut oils, natural colours and extracts. I think mostly they just look amazing – I can say that because I don’t make them – Ross is the chef and he is an absolute perfectionist, every recipe he carefully invented and they are just sublime!
*How are your mallows suitable for dietary requirements?*
Our marshmallows are naturally gluten free which makes them a great cake-alternative for those with gluten intolerances. Most of them are milk and soya free (just not the chocolate ones sorry!) and many are nut free too!
*How could marshmallows feature at a wedding?*
Most of our wedding clients serve marshmallows as favours – we can do little cellophane packets or clear boxes. Or they buy them ‘loose’ off us in batches of 36 and stack them high on cake stands as an alternative to wedding cake. One couple even just served them around a campfire at the end of the night as a luxury treat!
* How can your mallows be personalised to each couple?*
Lots of couples send us their own stickers that we use to seal the boxes and packets for their favours. Or we can even top each mallow with a little logo topper – although this is restricted to white marshmallows only (Vanilla, Peppermint or Coconut)
*What different flavours of mallows do you offer?*
Wow – so many! We pretty much offer around 16 flavours – Everything from Strawberry and Vanilla – The Wimbledon, to Passionfruit, Mango and Chilli – The Hoxton and Almond and Sour Cherry – The Kensington.
We can also do bespoke flavour / colour options – so if a couple came to us and said I want pink and blue marshmallows in lavender and coconut – we (usually) can do it.
*How far in advance of the wedding should couples order their mallows?*
Ideally at least a couple of months so we can schedule it in but we have had brides email us the week before their wedding and we’ve sorted it. Like everything with weddings it’s best to organise everything as far ahead as possible but we know life sometimes get’s in the way – it’s always worth popping us an email and seeing if we can squeeze it in!
*What areas do your mallows cover?*
We can deliver across the whole of the UK and Ireland. For mainland UK delivery is free on all orders over £150 otherwise it is £20. For non-mainland and Ireland we can quote on delivery – usually around £35. The mallows do not need to be kept in the fridge and we normally deliver two days before the big day so that they are super fresh.
